CELLAR INFORMATION Charlotte Krajewski has been quietly working on this exciting project for some time, unannounced, knowing exactly the style of wine she was after but needing to pull the pieces of the puzzle together, and the final piece came in the shape of a 700 litre concrete egg. The oval shape allows the lees to remain in a gentle but continuous motion during maturation, constantly circulating as there are no flat surfaces to settle upon which, in turn, allows for a gentle extraction and integration of flavours. Concrete may sound minimalist and industrial, however it provides an extremely stable temperature and, very importantly, a slower interchange of oxygen than a wooden barrel, ensuring the wine keeps all its original freshness and vivacity.
